Daffodil's Jerk Chicken and Lentil Stew Pasta



A fusion of Caribbean and Italian flavors, this pasta dish combines tender jerk chicken and hearty lentil stew served over pasta for a comforting and satisfying meal.

Ingredients:

  • 200g pasta of your choice
  • 2 boneless, skinless chicken breasts, diced
  • 1 cup lentils, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can 400g diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

Follow the directions on the package to cook the pasta until it is al dente

Remove the water and set it aside

Put olive oil in a big pot and heat it over medium-low heat

It will take about 5 to 7 minutes of cooking after adding the diced chicken until it is browned on all sides

Cut up some onion, garlic, and bell pepper and add them to the pot

It will take about 5 minutes of cooking until the vegetables are soft

Add the jerk seasoning and stir it in

Cook for one more minute to make the spices toasty

Boil lentils and add them to the pot along with chicken broth

Bring to a low boil, then cook for 20 to 25 minutes, or until the chicken is done and the lentils are soft

Add pepper and salt to taste

Put the cooked pasta on top of the jerk chicken and lentil stew

Before serving, sprinkle with chopped fresh parsley
