Paleo Hanukkah Latkes



These Paleo Hanukkah latkes are a delicious twist on the traditional potato pancakes, using sweet potatoes and coconut flour to keep them grain-free and Paleo-friendly. They're crispy on the outside, tender on the inside, and perfect for celebrating the festival of lights.

Ingredients:

  • 2 large sweet potatoes, grated
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 3 tablespoons coconut flour
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Coconut oil for frying

Instructions:

Grated sweet potatoes, chopped onion, beaten eggs, coconut flour, sea salt, and black pepper should all be combined in a big bowl

In a skillet over medium heat, preheat the coconut oil

Using a spatula, flatten spoonfuls of the sweet potato mixture into the skillet to create tiny pancakes

Fry for 34 minutes on each side, or until crispy and golden brown

To drain extra oil, move the cooked latkes to a plate covered with paper towels

Proceed with the leftover mixture of sweet potatoes

Serve hot with homemade Paleo-friendly sour cream or applesauce
