Gluten-Free Liege Waffles
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1/2 cup granulated sugar
- 1 packet 2 1/4 tsp gluten-free instant yeast
- 1/2 cup warm milk 110F or 43C
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 cup gluten-free pearl sugar
- 1/4 tsp salt
Instructions:
In a small bowl, combine the warm milk and instant yeast
Let it sit for about 5 minutes until it becomes foamy
In a large mixing bowl, whisk together the gluten-free flour and granulated sugar
Add the yeast mixture, softened butter, eggs, vanilla extract, and salt to the dry ingredients
Mix until a sticky dough forms
Cover the bowl with plastic wrap and let the dough rise for about 1 hour, or until it has doubled in size
Gently fold in the gluten-free pearl sugar into the dough
Preheat your waffle iron according to the manufacturer's instructions and lightly grease it
Spoon portions of the dough onto the preheated waffle iron and cook until golden brown and crispy
Serve the gluten-free Liege waffles warm, dusted with powdered sugar or topped with your favorite toppings like fresh berries, whipped cream, or maple syrup
