Ultra Rich Paleo Chocolate Cake Vegan + Gluten Free
Enjoy the decadence of this very rich chocolate cake that is also gluten-free, vegan, and paleo-friendly. This cake, which is made with healthy things like almond flour, ripe bananas, and dark chocolate chips, will satisfy your sweet tooth while also being good for you.
Ingredients:
- 2 cups almond flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup maple syrup
- 1/2 cup mashed ripe banana
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 cup dairy-free dark chocolate chips
Instructions:
Preheat oven to 350F 175C
Grease a 9-inch round cake pan with coconut oil and line the bottom with parchment paper
In a large bowl, whisk together almond flour, cocoa powder, baking soda, and salt
In another bowl, mix maple syrup, mashed banana, melted coconut oil, and vanilla extract until well combined
Pour wet ingredients into dry ingredients and stir until just combined
Fold in dark chocolate chips
Pour the batter into the prepared cake pan and spread it evenly
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely
Once cooled, slice and serve
