Juicy Pork Ribs with Blue Cheese Coleslaw



Enjoy the rich flavors of smoky barbecue sauce on juicy pork ribs, which go perfectly with the creamy tang of blue cheese slaw. The idea for this recipe came from Wine Spectator. It promises a delicious BBQ experience.

Ingredients:

  • 2 racks of pork ribs
  • 1 cup barbecue sauce
  • 1/4 cup brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • For Blue Cheese Coleslaw:
  • 3 cups shredded cabbage
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 cup crumbled blue cheese
  • Salt and pepper to taste

Instructions:

Preheat the grill to medium-high heat

Remove the membrane from the back of the ribs and season with salt and pepper

In a bowl, mix barbecue sauce, brown sugar, smoked paprika, garlic powder, onion powder, and cayenne pepper

Brush the ribs with the sauce mixture and place on the grill

Grill the ribs for about 25-30 minutes, basting with sauce occasionally, until cooked through and caramelized

While the ribs are grilling, prepare the Blue Cheese Coleslaw

In a large bowl, combine shredded cabbage, mayonnaise, sour cream, Dijon mustard, apple cider vinegar, and crumbled blue cheese

Mix well and season with salt and pepper

Once the ribs are done, remove from the grill and let them rest for a few minutes before slicing

Serve the sliced ribs with a generous portion of Blue Cheese Coleslaw on the side
