Slow Cooker Mediterranean Chicken
The juicy cherry tomatoes, tangy kalamata olives, and fragrant herbs in this Slow Cooker Mediterranean Chicken make it taste great. It's an easy recipe that will fill your house with delicious smells as it cooks slowly in the crockpot.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted kalamata olives
- 1/4 cup diced red onion
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Put chicken breasts at the bottom of a slow cooker
Apple slices, olives, red onion, and minced garlic should be put on top of the chicken
Put oregano, thyme, and rosemary that have been dried on top of the chicken and vegetables
Add chicken broth and lemon juice to the slow cooker and mix them together
Add pepper and salt
When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours
Add fresh parsley to the top of the chicken, vegetables, and cooking juices that you serve it with
