Slow Cooker Peach Salsa Pork with Roasted Sweet Potatoes



Peach salsa adds sweetness to slow-cooked pork, which is served over roasted sweet potatoes. This tasty dish is the perfect mix of sweet and savory, making it a great meal for any event.

Ingredients:

  • 3 lbs pork shoulder, trimmed and cut into chunks
  • 1 cup peach salsa
  • 1/4 cup brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional
  • 4 sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 cup chopped fresh cilantro for garnish

Instructions:

Put the pork chunks, brown sugar, ground cumin, smoked paprika, cayenne pepper, salt, and pepper in a bowl

And mix them all together

Putting the pork mix in the slow cooker

The pork should be soft and flavorful after 6 to 8 hours of cooking on low heat with the lid on

Warm the oven up to 400F 200C about an hour before you plan to serve

On a baking sheet, mix sweet potatoes that have been cut up with olive oil, salt, pepper, and dried thyme

For 30 to 40 minutes, or until golden and soft, roast sweet potatoes in an oven that has already been heated up

The roasted sweet potatoes should go with the pork that has been slow-cooked with peach salsa

If you want, you can add chopped cilantro and more peach salsa as a garnish
