This Creamy Parsnip Soup is great for cold winter days because it has a rich, velvety texture. This soup is both comforting and healthy because it is made with healthy foods like parsnips, onions, garlic, and cream. Ingredients:

  • 500g parsnips, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 500ml vegetable or chicken broth
  • 200ml heavy cream or coconut cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

In a big pot, heat the olive oil over medium-low heat

To make the food soft, add the onion and garlic and cook for about 5 minutes

After you add the chopped parsnips, cook for five more minutes

Turn on the heat and add the chicken or vegetable broth

Put the lid on and cook for 20 to 25 minutes, or until the parsnips are soft

Take it off the heat and let it cool down a bit

Put the mixture into a blender or a machine that makes soup

Mix until it's creamy and smooth

Add heavy cream or coconut cream to the soup after putting it back in the pot

Add pepper and salt to taste

If you need to, slowly heat the soup again

Serve hot with fresh parsley on top
