Thin Oat Crisps Cookies
Ingredients:
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the egg and vanilla extract to the butter-sugar mixture, and beat until well combined
In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Spoon small portions of the dough onto the prepared baking sheet, leaving enough space between them for spreading
Using the back of a spoon or your fingers, flatten and spread the dough portions into thin rounds
Bake in the preheated oven for about 8-10 minutes or until the edges turn golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, the thin oat crisps cookies are ready to be enjoyed!
