Irish Pancake Donuts



Irish Pancake Donuts are a delicious combination of traditional donuts and Irish pancakes. These delightfully sweet, fluffy, and mildly tangy treats make a great breakfast or snack.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup sour cream
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting
  • Maple syrup for dipping

Instructions:

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt

In another bowl, combine the buttermilk, sour cream, egg, melted butter, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; a few lumps are okay

Heat about 2 inches of oil in a deep skillet or pot to 350F 175C

Using a donut cutter or a round cookie cutter, cut out donut shapes from the pancake batter

Carefully place the donuts into the hot oil and fry for about 2-3 minutes per side, or until they are golden brown and cooked through

Remove the donuts from the oil and drain them on a paper towel-lined plate

Dust the donuts with powdered sugar while they are still warm

Serve the Irish Pancake Donuts with maple syrup for dipping
