Kefir Waffles with Almond Butter + Jam



These kefir waffles are a great way to start the day. The kefir gives it a sour taste, and the jam and almond butter make the topping sweet and nutty. Good for a cozy morning at home.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup kefir
  • 1/2 cup almond milk
  • 2 tablespoons sugar
  • 2 tablespoons almond butter
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Jam of your choice for topping
  • Butter or oil for greasing

Instructions:

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt

In a separate bowl, beat the egg and then add the kefir, almond milk, and almond butter

Mix until well combined

Pour the wet mixture into the dry ingredients and stir until just combined

Be careful not to overmix; a few lumps are okay

Preheat your waffle iron and grease it with butter or oil to prevent sticking

Pour the waffle batter into the preheated waffle iron, using the manufacturer's recommended amount for your specific iron

Close the waffle iron and cook according to the manufacturer's instructions until the waffles are golden brown and crispy

Carefully remove the waffles from the iron and serve immediately with your favorite jam and additional almond butter if desired
